This is the perfect curry recipe to introduce to your little ones. Mild in flavour, full of nutrients and great texture for those well established on solids. Le Puree cubes have done all the hard work for you. Ensuring this meal is packed full of vitamins, minerals and protein. With the small added extra’s you have a meal the whole family can actually enjoy.
INGREDIENTS
- 1 onion, diced
- 1 tsp sweet paprika
- 1tsp ground turmeric
- 1 tsp garam masala
- 2 cups cauliflower florets
- 12 cubes (1 full tray) Le Puree Thai Prawn Puree
- 6 cubes (1/2 full tray) Le Puree Organic Bone Broth
- 200g cooked, peeled prawns
COCONUT RICE
- 2 cups basmati rice
- 1 tin coconut milk
- 1/2 cup water
METHOD
In a large pan over medium heat, add the onion and spices. Sautee until the onion is softened and fragrant.
Stir through the cauliflower florets. Then add the 12 Thai Prawn Puree cubes, followed by the 6 Organic Bone Broth cubes. Add a splash of water and allow the cubes to defrost, stirring occasionally.
Once a sauce is formed add the prawns and allow to simmer for a further 5 min.
In a saucepan add the rice, coconut milk and water. Bring to a boil, then pop the lid and reduce to a simmer. Cook for 25min or until rice is cooked.
Serve the curry topped on a bed of fluffy coconut rice and voila! Enjoy!
